Every well-run operation has that one person—the one who brings order to the chaos, keeps everyone hydrated, and reminds the crew that yes, taking a break is allowed. For Turkey To Go, that person is Megan Lauzon, our Operations & Crew Wellness Lead.

Megan is my better half, the smart one of the group, and the most organized person on the team. While the rest of us are locked into high gear, Megan’s the one checking in to make sure folks are drinking water, resting their feet, and staying upright during the hottest days of the Fair. Trust me—without her, this booth wouldn’t just run slower... it might not run at all.

🚨 Meet the man who’s been up since before your first yawn: MATT SHAW.
He’s our Assistant Cook, State Fair early riser, oven whisperer, and former grilled cheese slinger from his days following the Grateful Dead in a VW bus. 🚌🔥

While you’re still deciding between a turkey leg or sandwich, Matt’s already dialed in the ovens, fired up the grills, and probably secured coffee and lemonade from Mike & Kat’s across the booth like the legend he is.

He’s the calm in the kitchen chaos. The heat behind the meat. The reason your sandwich hits every damn time.
